Details:
We were flying above the clouds and I noticed the circular rainbow colors or sun dog were following us and I realized they must be from the sun and the wing of the plane on the cloud.

You are observing the glory; it is found 180 degrees opposite the sun, and often observed when flying over thin clouds. Check out astronomy picture of the day search for many examples of it.
